Guacamole

  • 3 ripe avocados, mashed
  • 1/4 cup chopped sweet onion or green onions
  • 1/4 cup diced jalapenos, fresh or pickled
  • 1 tablespoon juice from peppers (if using pickled)
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 2 teaspoon fresh lemon juice
  • 3-4 cloves garlic, chopped

Mix all ingredients. Serve immediately--avocados turn brown after extended exposure to air. Addition of the lemon juice helps slow the process. Excellent with all Mexican dishes, on salads or as a chip dip.

This recipe is also great with the avocados cubed instead of mashed.
