Caesar Salad
DRESSING
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon vinegar
- 1/4 cup parmesan cheese
- 6 anchovy fillets
- 3 cloves garlic
- 1/2 teaspoon salt
- freshly cracked pepper
SALAD
- 1 head romaine lettuce, washed and torn into bite size pieces
- 1 cup croutons
- shredded parmesan cheese
Blend all dressing ingredients in a blender. Toss lettuce, croutons, shredded parmesan and dressing in a large bowl. Add a few rolled anchovy fillets if desired.
Add cooked chicken or shrimp to turn this salad into a meal.
