Kennedy Family Greek Salad
- 1 small head of lettuce
- 2 stalks celery, including the tops
- 2 green onions, chopped
- 1 small cucumber, sliced
- 1 tomato, sliced
- 1 small green pepper, cut in strips
- Feta cheese, crumbled
- Calamata olives
- Anchovy fillets
Dressing
- 2/3 cup olive oil
- 1/3 cup wine vinegar
- 1 tsp salt
- 1/4 tsp pepper
- 1 clove garlic, crushed
- 1 tsp oregano
Shake dressing ingredients in a small jar with a tight fitting lid. Pour
over salad just before serving.
